We love RSPCA Cupcake Day. It's now the sixth year we've been involved baking 100s of cakes and raising money for such a great cause. Over the years we have tried many different recipes, but these ones for Pupcakes and Kitty Cakes are definitely the best!
KITTY CAKES (Makes 6 mini cupcakes)
INGREDIENT | QUANTITY |
Egg Whites | 1 |
Plain Flour | 1.5 tablespoons |
Shredded Cheese (Colby) | 1 teaspoon |
Tinned Tuna or Salmon | 85g |
Instructions:
- Mix all the ingredients together in a bowl
- Spoon into mini cupcake cases
- Heat oven to 175 degrees
- Bake for 15 minutes
You can also make one bigger cake if you'd like!
PUPCAKES (Makes 20 standard size cupcakes)
Cake:
INGREDIENT | QUANTITY |
Eggs | 2 |
Banana (ripe) | 1/2 cup |
Smooth Peanut Butter | 1/2 cup |
Wholemeal Flour | 3/4 cup |
Rolled Oats | 1/4 cup |
Baking Powder | 1 teaspoon |
Water | 1/2 cup |
Topping:
INGREDIENT | QUANTITY |
Cream Cheese | 225 grams |
Smooth Peanut Butter | 1/2 cup |
Cake instructions:
- Pre-heat oven to 180 degrees
- Place cupcake cases in a muffin/cupcake tin
- In a medium-sized bowl, whisk together wholemeal flour, oats and baking powder
- In the bowl of a stand mixer or in a large bowl with a hand mixer, cream together peanut butter and mashed banana
- Mix in eggs
- Mix in flour mixture, alternating with water, until just combined
- Fill cases about ¾ of the way with batter
- Bake for 12-15 minutes, until a toothpick inserted in the middle of a cupcake comes out clean
- Let them cool in the tin for a few minutes before moving to wire racks to cool completely before adding topping
Topping instructions:
- In the bowl of a stand mixer or in a large bowl with a hand mixer, combine cream cheese and peanut butter and beat together until creamy
- Fit a pastry bag with tip and fill bag with frosting. Or just use a ziplock back and slice off one corner
- Pipe frosting onto each cupcake and top with an additional dog treat
